Simply Sweet Salad

Step #1: Place one egg per salad in a pot filled with room temperature water. Cook on HIGH HEAT for fifteen minutes.

I LOVE this salad! It is so quick and easy to make.

Step #2: While your eggs are boiling, make the rest of your salad. Lay out one container per salad.

AND, it is ALWAYS so yummy!

Step #3: Fill each container with baby spinach.

Beyond being easy to make, it is “simply sweet”…

Step #4: Pick six grapes per salad.

Fresh grapes give a crisp sweetness…AND…an energy boost…

Step #5: Cut your grapes in half and add to salad.

They are PERFECT pick-me-up in the middle of your day!

Step #6: Sprinkle a small handful of walnuts on top of each salad.

( If you aren’t a grape person, I often substitute the grapes with granny smith apples cut into about half inch chunks. )

Step #7: Sprinkle a half of a handful of dried cranberries on top of each salad.

Adding in walnuts helps to keep you full for longer periods of time. Walnuts are also known for being extremely heart healthy…a great addition to ones salad, day, and life!

Step #8: NOW, once fifteen minutes has passed from your start time, pull out your boiled eggs. De-shell them, under running water for ease, and slice.

Speaking of health benefits, EGGS! They give you tons of protein…and just happen to be my favorite food. Mmmm. This protein will also keep you full during your day!

Step #9: Lay your egg slices on top of your salad. VOILA! You are done.

You mix all of this healthy deliciousness together and—VOILA!—you have a “simply—nearly effortless—sweet salad”.

Step #10: Eat with Fat Free Balsamic Vinaigrette.

As it is a pretty sweet salad, top with a balsamic dressing. A sweeter one will make the salad overly sweet…like candy.

THE Shopping List:

Portion Size: Personal Lunch

  1. Eggs (x1 per salad)
  2. Baby spinach
  3. Grapes (whichever type you prefer)
  4. Dried cranberries
  5. Walnuts
  6. Low fat balsamic vinaigrette

  1. I’m a fan of this salad, but I leave out the egg and trade walnuts for pecans. For some reason I just really like the cleanliness of pecans, fruits and berries. Another variation is substitue granny smith apples for the grapes and fat free italian dressing for the balsamic. Mmmm, delicious!
