I LOVE this salad! It is so quick and easy to make.
AND, it is ALWAYS so yummy!
Beyond being easy to make, it is “simply sweet”…
Fresh grapes give a crisp sweetness…AND…an energy boost…
They are PERFECT pick-me-up in the middle of your day!
( If you aren’t a grape person, I often substitute the grapes with granny smith apples cut into about half inch chunks. )
Adding in walnuts helps to keep you full for longer periods of time. Walnuts are also known for being extremely heart healthy…a great addition to ones salad, day, and life!
Speaking of health benefits, EGGS! They give you tons of protein…and just happen to be my favorite food. Mmmm. This protein will also keep you full during your day!
You mix all of this healthy deliciousness together and—VOILA!—you have a “simply—nearly effortless—sweet salad”.
As it is a pretty sweet salad, top with a balsamic dressing. A sweeter one will make the salad overly sweet…like candy.

- Eggs (x1 per salad)
- Baby spinach
- Grapes (whichever type you prefer)
- Dried cranberries
- Low fat balsamic vinaigrette
